The recipe: Beef Tenderloin with Roasted Cauliflower-Pomegranate Salad

Serves 4 · Prep 15 minutes · Cook 25 minutes · Total 40 minutes

Ingredients

  • 4 Origin Provisions grass-fed beef tenderloin fillets (6 oz. each)
  • 5 Tbsp. coconut oil, divided
  • 1 tsp. freshly ground pepper
  • 1 head cauliflower, core removed and cut into bite-sized pieces
  • 5 large shallots, thinly sliced
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. whole-grain Dijon mustard
  • 1 package baby kale, stems removed
  • ½ c pomegranate seeds

Directions

  1. Preheat the oven to 400 degrees.
  2. Heat a cast iron skillet on high heat with 1 tablespoon coconut oil.
  3. Sprinkle the fillets with black pepper. Sear 2 minutes per side, until a light crust forms.
  4. Transfer the skillet to the oven and cook 5–6 minutes.
  5. Remove the pan and place the fillets on a separate plate to rest.
  6. Toss 2 tablespoons oil with the cauliflower and shallots; season with additional pepper if desired.
  7. Scatter the vegetables in the beef pan, return to the oven, and bake 15–18 minutes, stirring the vegetables once.
  8. Remove from the oven.
  9. Whisk together the remaining 2 tablespoons oil, lemon juice and mustard.
  10. Stir the kale into the hot pan with the vegetables.
  11. Drizzle with the oil mixture and sprinkle with pomegranate seeds.
  12. Slice the beef and serve with the cauliflower pomegranate salad.
